I made these yummy egg muffins for a quick grab-and-go. I had 3 as my last meal last night!! super easy!! this is what I used, but you could easily modify it to suit your goals:


  • 6 whole eggs
  • 2 cups liquid egg whites
  • 100g frozen spinach
  • 150g cooked lean ground beef
  • 100g shredded cheese
  • 1/2 Tb onion powder
  • 1/2 Tb garlic powder
  • sprinkle red pepper flakes
  • 1/4 tsp smoked paprika
  • fresh ground black pepper & sea salt


Preheat oven to 350

  1. Scramble eggs & add seasoning.
  2. Fill 18 muffin cups with other ingredients. I did about a tablespoon of each cooked beef, frozen spinach & shredded cheese. My beef was cooked with salt, pepper, garlic & onion powder. (It’s what I keep cooked in the fridge for other meals.) 👌🏼
  3. Ladle egg mixture into each tin & bake for ~25min on 350 degrees (I take a fork and just stir each little tin to get the beef & cheese mixed in well.)





This recipe Makes 18 muffins (BC that’s how many muffin tins I had, lol)
